Going bananas

I’m beginning to think that the wisdom of old age consists less of learning something new than it’s a process of unlearning something old.

I grew up being told by my mother than bananas should never be put in the refrigerator.  I learned about a year ago from a friend that isn’t quite so – that they can be frozen and used in a variety of different ways.

But now I’ve discovered that putting bananas in the refrigerator are an excellent way of preventing them from getting rotten.  Chiquita bananas, who were responsible for the original advice, have even said so.

There’s a trick, though.  You shouldn’t put them into the refrigerator until they have reached the stage at which you want to eat them.  Because although the skin will blacken, the fruit will not ripen once the fruit has been refrigerated — even after it is taken out of the fridge.

I’ve kept them green for more than two weeks.  Just out of curiosity, I’m tempted to put a test banana in the fridge and see just how long it will last.  As long as an apple?  a potato?  a grapefruit?

  1. as you say, put the banana in the fridge at the desired ripeness. if you put it in green, and do not wish to use it in that state, it will not ripen once taken out of the fridge (in most cases) once placed in the fridge should last another week. in the freezer (i remove peel before freezing) it will last several months. that is if the grandkids are not here – in which case i cannot keep them – great dipped into melted chocolate and rolled in walnuts or almonds or whatever nut or coconut or peanut butter. ps grapes (i prefer green) are also a great desert in freezer, taken out and tossed either with yogurt or sour cream and a little brown sugar. (this is what i learned from cooking for 30 nuns all summer long)

    • Uh ho: I’m not sure you should have told me about the melted chocolate & walnuts bit. I’m not sure I need the grandkids — We might have a couple resident raiders ready to take on the part.

      Sounds delicious. I’m going this very minute to freeze a peeled banana.

    • Interested to hear if it still tastes as good in “maturity” as in your childhood. Sounds pretty good to me. My husband grew up in England during WWII and didn’t taste his first banana until he was a teenager. He still wonders what people like about them. So I suspect that with only one enthusiast, bananas & chocolate are not going to make it too big in our kitchen.
